  • Fior di latte — fresh mozzarella made from cow's milk in Agerola, a mountain town in Campania. Soft, milky, with just enough structure to hold up in the oven.

  • Parmigiano Reggiano — 18-month aged, hand-crumbled. The real thing, not the pre-grated powder.

  • Extra virgin olive oil — cold-pressed, finishing drizzle only. Never used for cooking at high heat.
