DOP Ingredients from Italy

DOP stands for Denominazione di Origine Protetta. It's a European certification that guarantees a product comes from a specific region and follows traditional production methods. It's not a marketing label. It's a legal guarantee.

Massilia's ingredient list reads like a map of southern Italy:

  • San Marzano DOP tomatoes — grown in the volcanic soil near Mount Vesuvius. Sweeter, less acidic, fewer seeds than regular plum tomatoes. The only tomato that belongs on a Neapolitan pizza.

  • Fior di latte — fresh mozzarella made from cow's milk in Agerola, a mountain town in Campania. Soft, milky, with just enough structure to hold up in the oven without drowning the pizza.

  • Parmigiano Reggiano — 18-month aged, hand-crumbled. The real thing, not the pre-grated powder.

  • Extra virgin olive oil — cold-pressed, finishing drizzle only. Never used for cooking at high heat.

These ingredients cost more. They're harder to source. They spoil faster. They're also the reason the pizza tastes different from everywhere else.

The 72-Hour Dough Process

Most people don't think about what happens before the pizza hits the oven. At Massilia, the process starts three days before service.

Day one: flour, water, salt, and a natural sourdough starter come together. No commercial yeast. The dough is mixed slowly, then left to ferment at controlled temperature.

Day two: the dough develops. Natural bacteria break down the starches, creating complex flavours and the characteristic air pockets in the crust. This is where patience does the work.

 

Day three: the dough is portioned, shaped by hand, and ready for the oven. Each ball is stretched thin, topped, and slid into the 450°C oven for exactly 90 seconds.

 

The difference is visible. Touch it. A properly fermented crust bounces back. It's lighter than it looks. The char is uneven, natural, beautiful. That's not a flaw. That's 72 hours of work showing up on the plate.
