LA PIZZA GOURMET

Pizza Massilia was born in 2015 as a Pizza Truck in Sala Daeng (Bangkok, Thailand) and later on, in December 2016, in Soi Ruam Rudee and Sukhumvit Soi 49.
Using only the best artisan products from Italy, the selection of raw materials is very curated. Our award winning pizzas are prepared in original wood-fired ovens, as our Italian ancestors used to.

the leavening

Everything starts with the fermentation and the leavening of the dough, which is the most important moment of the entire process. There are two fundamental elements: water and flour.
The stone grinding of the cereals allows us to obtain flours that are more complete and rich in taste, these flours are not impoverished by rapid industrial processes and they are not as likely to bring dietary intolerances.

Organic Italian flours are obtained through the natural stone mill from Mulino Marino producer. These are natural stone milled flours, a precious variety from the Langhe, Piedmont, established since 1950s. Special flours from ‘Molino Artigianale dibenedetto’, located in Almatura (Bari), are also representing a great result of finest raw material selection.

We hand-select our products directly from Italy’s regions known for their native flavors and distinctive products.
San Marzano tomatoes are prized in Italy and across the world for their thick flesh and sweet flavour.
The tomatoes also have a lower water content and fewer seeds than some others, which makes them a great choice for canning and using whole in rich tomato pasta and pizza sauces.
